
Ingredients
- 500 g lamb (cubed or bone-in)
- 2 cups basmati rice1 large onion, chopped
- 2 tomatoes, chopped
- 4 cloves garlic, minced
- 2 dried limes (loomi), pierced
- 1 cinnamon stick
- 3 cardamom pods
- 3 cloves
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander powder
- 3 tbsp vegetable oil
- 4 cups water or stockSalt to taste
Instructions
- Heat oil in a large pot and cook the onion until golden
- Add garlic and tomatoes and cook for 3 minutes.
- Add lamb and spices. Stir until the meat browns.
- Pour in water or stock and add dried limes.
- Cover and simmer for 40–50 minutes until lamb is tender.
- Wash rice and add to the pot.
- Cook on low heat until rice is soft and water is absorbed.
- Serve hot.
